Green Garlic and Mushrooms with Brown Sauce

Carrot Julianed                                1 small
Celery Julianed                                1/2 stalk
Onion  Julianed                                ½ ea
Mushroom Sliced                             4 large
Green Garlic Sliced                          3 stalks
Flour                                                 2 Tablespoons
Soy                                                  1/4 cup
Mirin                                                 1/4 cup
Water                                               1 cup
Black pepper                                    1/2 teaspoon
Coriander                                         1/2 teaspoon
Red pepper                                      2 teaspoon

Method

Tossed Green Garlic in flour in a small bowl. Heat up pan until very hot. Add Carrot, Celery, Onion and Mushroom. Saute vegetable hard until about 40 percent cooked tossing constantly. Add Garlic with flour and cook for about 60 seconds. Add water, soy, miso, miran and spices. Cooking until vegetables are cooked and thick brown sauce forms. Served over rice.
