Spring Breakfast Toast

 

Ingredients
For Whipped Ricotta
               Ricotta                                1 Cup
               EVOO                                  2 Tablespoons
               Lemon Juice                      1 Tablespoon
               Salt                                      to taste
For Topping
               Breakfast Radishes          5 or 6 Each
               Asparagus                          4 or 5 Spears
               EVOO                                  1 Tablespoon
               Salt                                      To taste
Sour Dough                                      1 Thick Slice
Fried Egg                                           1 Ea      

 

Method
Combine all whipped ricotta ingredients in a bowl and mix vigorously with a spoon until combined and smooth. Combine topping ingredients, toss and bake in oven at 450 until cooked al dente. (a little color is desirable). Toast Sour Dough. To assemble spread ricotta on the toast and add topping. Season with more lemon and salt to taste and top with a fried egg.
